Challenge: More than Just Pasta - Meal Planning

Hey everyone.. as you have read, in February we are challenge ourselves to eat from freezer & pantry. I did go to ALDI's yesterday, and did spend my budget $60, but I bought groceries for two different recipes that I will make this week (watching alot of videos on youtube recently (shout out to #MandyintheMaking, her dinner ideas are more than just pasta). As well as our groceries included snacks for Grace. And fresh produce (garlic, cole slaw, bananas.. some of this stuff you need every week). Anyway.. with that said.. I have a plum paper goal setting book (i did an unboxing video on that book).. goal setting in the front of the book, but "meal planning" in the back.. I absolutely love it. I list what we are having for breakfast, lunch, and dinners. What we have on for snacks and in the freezer, and what I need to stock pile on. I really have been doing great putting everything in it.. it holds me accountable for what I'm eating and gives me ideas for later on.. remembering our favorites (or not so favorite). This past week, we ate: Meatballs with cauliflower rice, stuffed chicken breast with ham & cheese w/baked beans; Taco Soup; Salmon & fish (I had one of each left in the freezer, and we each had a piece with a couple of stuffed clams (also from the freezer) linguica dogs and chips and then last night I made a pulled pork (that was in the freezer) with cole slaw.


This week I got two of Mindy's meals planned and I'm out one night, Gary will eat his buffalo chicken strips (in the freezer) and we'll have leftover two of the nights.


Challenge yourself & your family to eat what you got in the house.. and get out of 'habit' grocery shopping as I call it.. it's something to do on the weekends, because we've always done it.
