Hi, everyone! Just a quick update on the "eat from freezer/pantry challenge" from February. We did great with our grocery budget, only spending $189! All cash, because for me using cash is better than swiping. I put aside $60/week, sometimes just $40 and I created a sheet of what we had in the house and used food from our freezer and pantry to create healthier meals.
I started following #MandyintheMaking on youtube, she has some GREAT videos on dinner and lunch ideas not involving pasta. I say that as someone who had to live at a #ronaldmcdonald house for a period of time when my daughter was in the NICU. Usually people rely on pasta when cooking for a group of people because it's cheaper but it's not the healthiest. So, for me, when I'm looking for easy dinner recipes, I try and look for healthier (or turning it healthier, swapping couscous for cauliflower rice; swapping pasta for zucchini noodles, etc.), and Mandy in the Making has some great recipes and dinner ideas.
I know we can continue with lowering our grocery bill monthly and every few months eating from freezer/pantry gives us opportunity to eat something versus throwing it out.
We did spend $161 in dining out as well in February..but that's alot better than the previous month where it was over $250. Our goal is $200 or less a month.. and we can do it!
Challenging ourselves is cause for celebration!
